With 24 dining location across campus and a nationally ranked dining hall* that offers over 22 unique stations — including one dedicated to gluten- and allergen-free dishes — you’ll never get bored. And you’ll always have somewhere to make memories with your friends.

Sustainability

In the Fall of 2017, Liberty Dining Services made to switch to use Eco-Products, a company that provides 100% biodegradable flatware, plate ware, and cups. Their products are also BPA-free, compostable, and made from renewable energy sources such as cane sugar.
Dining Services partnered with Liberty’s Recycling department and Royal Oak Farms, a local waste management company. Students can dispose of their Eco-Products and compostable items in special bins, which are sent to Royal Oak Farms for composting. After it’s been turned into rich soil, that soil is then used on various campus landscaping projects.
Our urban farming herb garden grows various types of herbs (such as basil, thyme, parsley, rosemary and more) which are used in dishes served throughout the dining hall.
We use napkins are made of 100% recycled paper, and our Xprss Nap dispenser encourages customers to take (and waste) fewer napkins.
We are a trayless campus. Trayless dining cuts down on the likelihood of wasting food or overeating and reduces the amount of water and detergents needed to wash trays — it saves energy too!
92% of the chemicals Liberty Dining uses are “Green Seal” certified, concentrated, or sustainable.

We work closely with local produce distributors to purchase from local farms and dairies and participate in farm-to-school initiatives. Tracking local purchases helps us to meet our Better Tomorrow Plan commitment of 20% local purchase by 2020.

Our on-campus Argo Tea uses Caribou Coffee, which is rainforest certified, small batch crafted, and sourced from small farmers.

We are proud to feature 100% Transfair, Fair Trade USA certified aspretto coffee and 100% USDA certified organic and ethically sourced Numi teas. Everything that touches the product is green, from the 10% post-consumer fiber cups to the renewable resource stirrers to the fair trade sugar wrapped in recyclable paper and printed with vegetable dye

Reber-Thomas Dining Hall

The Food Court at Reber-Thomas, the university’s main dining hall, provides breakfast, lunch, and dinner and gives you over 20 unique stations to choose from, including:

  • The Training Table, with menus designed specifically for student-athletes
  • A Mongolian grill
  • A barbecue meat smoker
  • An international station
  • A large salad bar
  • A vegan station
  • Fresh sushi
  • Made-from-scratch pasta
  • A nacho and burrito station
  • A burger station
  • Made-to-order omelets
  • Coffee and smoothies

Special Dietary Needs

From the general manager to front-line servers, we work diligently to address students’ specific needs, especially those with food allergies, Celiac disease, or special diet needs. In 2017, our program won Best Allergy Training at a University by Restaurant.org and AllerTrain.

Our award-winning Simple Servings station at the Food Court at Reber-Thomas offers meals prepared without gluten or seven of the most common food allergens: peanuts, milk, eggs, wheat, soybean, shellfish, and tree nuts.

For those with a gluten intolerance, gluten-free pitas, pasta, buns, bread, pizza crust, and other gluten-free options are available at dining locations throughout campus. And our Gluten Intolerant Options Program (G.I.O.) allows students with a gluten dietary restriction to swipe for a gluten-free item at no additional charge (gluten-free options are available to students not enrolled in the G.I.O. for a small fee).

Meal Plans

Liberty offers three meal plans for students: Freedom Dining, Freedom Dining PLUS+, and 14 swipes per week (second-semester juniors and seniors only).

  • Both Freedom Dining plans offer unlimited access to Liberty’s main dining hall, The Food Court at Reber-Thomas. With either plan, you will also receive $200 per semester ($120 Dining Dollars and $80 Flames Cash). And both plans give you 10 swipes per week!
