Liberty University’s dining operations have been recognized in the October issue of Food Management magazine, which features an article on the colleges that are serving the largest number of students who live on campus.
Liberty, which partners with Sodexo as its dining services provider, landed at No. 39 on the list of the top 50 largest dining programs at colleges across the country. Liberty reported more than 7,700 students living on campus and 8,300 meal plans sold.
Profiles were provided on each of the colleges on the list, and Liberty’s profile included information on several recent upgrades to its dining facilities. New stations at Reber-Thomas Dining Hall include a Mongolian Grill, Homestyle barbeque, a Rise & Shine Breakfast Nook that is open for all three meal times, a Smoothie/Coffee station, and the Training Table (meals for high-performance nutrition). The dining hall also has an expanded allergen-free Simple Servings station.
The Doc’s eatery has also been expanded and split into two distinct concepts: Doc’s Food on Demand with a pre-order kiosk, and Doc’s Gourmet To Go, which will offer an online ordering system through the university’s website as well as the first drive-thru on campus.
Four retail concepts have been added to the Tilley Student Center: Wholly Habaneros, Bella Trattoria, Natural! (a smoothie/juicer station), and Simply To Go (healthy grab-and-go). The article also mentions Sodexo’s partnership with Liberty’s Campus Garden to provide fresh, locally grown produce for dining hall menus.
