Food tastings pop up around campus

This year, Sodexo is bringing unique flavors to the table with Chef Pop-Ups. Students will be able to taste out-of-the-ordinary dishes created by Liberty University Dining Service chefs who will “pop up” throughout each semester in various locations on campus to give these food items away for free.

According to Sodexo’s Unit Marketing Specialist, Ryan Wheeler, some of the cuisines that will be served this semester include kohlrabi noodles with nutmeg alfredo sauce, Ahi tuna on a bed of sesame rice with a seaweed salad, pork tacos with pineapple pico and huckleberry cheesecake tarts.

Resident Executive Chef Sarah Falls said the pop-ups are a way to test various food options to see if the unique dishes will resonate with the students on campus.

“It helps us to get feedback on new items that we may want to incorporate in a menu on campus in the future,” Falls said.

However, Wheeler said that getting feedback is not Sodexo’s only goal. He said that providing a more global experience for students is also one of their priorities.

In agreement, Falls said that she and her fellow chefs have been more than happy to cater to this idea.

“We want to help broaden their culinary horizons and palates,” Falls said.

Wheeler said he hopes that students will come away from this experience with a new appreciation towards Dining Services’ highly certified team of chefs.

For Falls, she said that she enjoys cooking for the students and finds her job to be very rewarding.

“Liberty has the best students in the world,” Falls said. “It’s very satisfying to know that the food we cook is vital to their success in college and in the future.”
