New food options offered

Dining services broadens meal options provided in numerous on-campus spots

Sodexo dining services is offering new options to students with food allergies, gluten intolerance or those who prefer “simpler” foods. The Simple Servings program, among others, is designed to help students make health-conscious decisions while catering to the growing number of students who dine on campus.

Marketing and Catering Sales Manager for Liberty University dining services Julie Pfeifer described the Simple Serving Program as one that differs from anything that has been previously offered by catering to students who may have specific allergies.

“Simple Servings offers students foods prepared without seven of the eight most common FDA allergens,” Pfeifer said. These include peanuts, tree nuts, shellfish, wheat, soy, milk products and eggs.

In addition to the Simple Serving option, there are several other new programs that will be added all over campus. Lavash is a Mediterranean-themed food truck that will feature sandwiches and salads with a Greek influence. According to Pfeifer, Red Avocado is described as a “facelift” for the Reber-Thomas Dining Hall’s old southwest station. The new menu will include pulled pork, freshly-smoked meats and made-to-order quesadillas and burritos. The new Wellness Zone will also feature a larger variety of salads and homemade dressings. Pfeifer said these options are ideal for a low-calorie diet.

“The Wellness Zone is for students who don’t want to sacrifice taste for low-calorie dining,” Pfeifer said.

In addition to these healthy choices, Sodexo is accommodating students who have a sweet tooth and a love for Chick-Fil-A, as Dunkin Donuts will replace the Keyhole on South Campus and Chick-Fil-A is now open in the Tilley Student Center. Pfeifer seems hopeful that Dunkin Donuts will be a huge success among students.

“Students will be able to enjoy their favorite coffee drinks, freshly made donuts, and breakfast sandwiches on-the-go,” Pfeifer said.
Chick-Fil-A has proven to be one of the most popular food outlets on campus, and with its new location, Pfeifer is sure that it will remain so.

“We are thrilled to have such a beautiful new build-out and expect it to remain one of our most popular retail outlets.”

Pfeifer stressed that students seem to be enthused about the new food options on campus, as she has been receiving positive feedback from many individuals.

“Students are very excited about our new concepts. They say you eat with your eyes first, and I think the more opportunities we give students to make better food choices which appeal to the senses, they will be pleased,” Pfeifer said.

Pfeifer seemed optimistic about future restaurants and dining options on campus as she and her team continues to accommodate the ever-growing student body.

“Plans are currently underway for additional dining at DeMoss and the new library. As construction continues to progress, more solid plans for dining brands and concepts will as well,” Pfeifer said. “As the campus grows, we will continue to research and develop new and fresh ways to keep dining exciting for Liberty University students, staff and faculty.”
